cooking on the road

Ok, so this was delicious!

1 lb of nice stew meat ( I got this non hormone beef at trader joes)
1/2 yellow squash cubed (about 1 cup)
1 cup butternut squash cubed
1/2 of a large red onion chopped fine
10-12 small carrots (I used baby carrots, 1 large probably)
2 pieces of celery chopped
6-8 mushrooms chopped
1 cup green beans broke up into small pieces ( I used trader joes frozen and just broke them while frozen into the pot)
2 medium sized red potatoes scrubbed, quartered and sliced thin
1 Pacific Organic Beef Broth
2 Bottles of water (it's not filtered in a hotel, so I used drinking bottles)
some organic beef base....
Garlic cloves about 10
organic nosalt seasoning (I use kirkland from Costco)
Blend it Spice blend ( any cajun or creole should do it
Paprika
Sea Salt
Freshly ground pepper
olive oil

I marinated the beef in olive oil, garlic and sea salt, fresh pepper and the spice blend. I sauteed the onion and celery in a little olive oil and when soft, added the beef to brown. When the beef was nice and browned, I added the broth, all the squash, all the potatoes and well, everything. I seasoned it with paprika and some more organic no salt seasoning, and once the potatoes and squash were soft added a bit more salt and pepper, as potato can absorb and almost erase these from the flavor.
The flavor was fabulous. Using a good quality meat, excellent seasonings, and fresh organic vegies makes a world of difference. :)
